Siyez (Einkorn) Wheat

Tufan Organik Siyez (Einkorn) Wheat, part of the Grains and Flours range, is a natural food rooted in Gürün/Sivas.

Siyez Wheat: A Hulled Grain from Ancestral Seed

Siyez wheat is an ancient wheat species known as an ancestral seed, whose grain develops together with its husk. Its grains are small, firm and brownish; when cooked, they offer a subtle hazelnut-like taste and a firm, pleasantly chewy texture. It adds character to many dishes, from pilaf to salads.

At Tufan Organik, we added siyez to our catalogue for those who want to make room for time-honoured flavours at their table. Soaking it in water for a few hours before cooking softens the grains and shortens the cooking time. Storing boiled siyez in the refrigerator and using it in different dishes throughout the week is also a practical approach.

Usage Suggestions

  • Fluffy siyez pilaf, sautéed with onion and cooked in meat broth
  • A hearty salad of boiled siyez with pomegranate molasses, parsley and walnuts
  • Siyez soup or keşkek (a traditional slow-cooked wheat dish), simmered over low heat in bone broth
