Golden-Yellow, Hearty Recipes with Cornmeal
Stone-ground cornmeal is a yellow, slightly coarse flour made from dried corn kernels. It adds a distinct sweetness and a characteristic color to doughs. Its uses range from cornbread and muhlama to cookies, and even in simple recipes it gives the plate a warm character.
Tufan Organik offers cornmeal for use in home kitchens either on its own or mixed with wheat flour. Because it yields a less elastic dough than wheat flour, it adds a soft crumbliness to many recipes, from cakes to crêpes. When used as a coating for frying, it also creates a crispy surface.
Serving Suggestions
- Prepare a thick muhlama (cheesy cornmeal dish) with butter, cornmeal and cheese.
- Mix it with yogurt and eggs and bake cornbread in the oven.
- Dredge fish or vegetables in cornmeal before frying for a crispy coating.
