Karacadağ Rice

Karacadağ Rice

Tufan Organik Karacadağ Rice, from the Grains and Flours range: a natural food with roots in Gürün/Sivas.

A Local Grain for the Table with Karacadağ Rice

Karacadağ Rice is a local rice that has been grown from the same seed for centuries. When cooked, its grains become plump and soft, and its distinctive, delicate aroma spreads across the table. The grains release their starch slowly and cling together slightly, making it a pilaf rice that goes well alongside saucy dishes and is also a pleasure on its own.

We keep this rice on the Tufan Organik shelves for those who want to keep regional flavors alive in their kitchen. Rinsing it several times before cooking and letting it rest in lukewarm water for a while helps the grains cook evenly. Stirred in butter and steamed with hot water, even the simplest pilaf takes pride of place on the table.

Serving Suggestions

  • Prepare a plain pilaf by toasting it in butter and steaming it with chicken stock.
  • Use it in the filling of meat-stuffed peppers and stuffed vine leaves.
  • Cook it slowly with milk over low heat to make a creamy rice pudding or baked rice pudding.
