Tel Kadayıf: The Foundation of Crispy Desserts
One of the most familiar ingredients in syrup-soaked desserts, tel kadayıf consists of dough in fine threads. When its tangled strands are tossed with butter and baked, they turn golden and crisp. It holds on to this crispness for a while even as it absorbs the syrup, leaving a light crunch in every bite.
Desserts such as pistachio kadayıf, burma kadayıf (rolled shredded pastry) and kunefe are made with tel kadayıf. Pulling the strands apart and fluffing them by hand before use helps the butter spread evenly. Tufan Organik offers the main ingredient of these desserts, which often pair with Antep pistachios, among its kadayıf varieties for those who love making desserts at home.
Serving Suggestions
- Toss the strands with butter, scatter Antep pistachios between them and bake pistachio kadayıf in a tray.
- Wrap them around a thin rod to shape burma kadayıf, and pour syrup over them once they come out of the oven.
- Fry them in butter in a pan and add them as a crispy layer on top of ice cream or milk pudding.
