Dried Tomatoes with a Sun-Dried Flavour
Dried Tomatoes consist of tomatoes dried in the sun. Having lost their moisture, the tomatoes gain a much more concentrated flavour than when fresh, moving between sweet and tangy. Their texture is pliable and chewy; soaked in lukewarm water or olive oil, they soften and can be used in a wide range of dishes, from salads to oven bakes.
Drying tomatoes at the end of summer is one of the well-known steps of preparing for winter in Gaziantep cuisine. You can chop and use them directly, or marinate them in a jar with olive oil and thyme to prepare your own meze.
