Carob extract is a dark brown, thick syrup made from the fruit of the carob tree. Its taste carries sweet, slightly astringent notes reminiscent of caramel and cocoa. It flows much like molasses; it drips slowly from the spoon and brings a deep color to every recipe it is added to.
